Crock pot Thai chicken with spicy peanut sauce

There’s no dearth of ethnic recipes in my menu repertoire when winter rolls around.  What is it about the cold weather that draws us to these comfort foods?  The advantage of this dish is the crock pot method.  It’s a boon for busy families that don’t have time to fuss about dinner during the work week, or perhaps even on a weekend when all the activities get in the way.  I’ve been recently cooking Indian curries in the crock pot for a few months now, and honestly I’ll have to say I’m just chuffed with the results.  I seldom cook a curry in the summer time as I don’t wish to heat up the kitchen, but the crock pot method should definitely change that.  I did not even have to brown the chicken before putting it in the pot.

If you like Asian-inspired dishes, you will love this Thai chicken, the peanuts and cilantro round off the dish nicely.  So bring out your chopsticks, what are you waiting for?

I made one over the weekend that was just delicious, I threw in veggies at the same time, and it all turned out just amazing!   2. Love, love, love this dish Loretta! Yummy flavors! Question…I see you use bone-in thighs… Do you think your recipe would adapt to boneless/skinless thighs? My freezer happens to be stocked with them… Thanks!

    1. Thanks Nancy. When I first made it, I did use the boneless/skinless and yes it did just fine. However, you will have to reduce the cooking time as It will get pretty shredded up on its own if left too long. I guess I like using skinless with bone-in, as they hold up better and the end result, is more intact. (Besides, I love bones in anything, I think it provides more flavor) But no worries, you won’t be compromising on the taste. Either way is just great, enjoy! Let me know how this turns out for you.

    1. Thanks, I do love Asian dishes too, especially in the winter months. Even though I don’t work outside the home, I still find it a boon for saving time when one has a busy day. You’re right love how the entire home smells when you come into the house. I’ve actually used it for baking a few sweet breads in it too, it turned out wonderfully moist.   3. Loretta, your dish sounds really lovely. I have just discovered the deliciousness of Thai food and I would love to add this on my list. I have one question, is there any substitute for the lemongrass paste in case I don’t find one?? And since I don’t have crock pot, could I do it in the oven?

    The crock pot sounds like very helpful. Maybe I’d invest on one. :D

    1. Thanks Jhuls, yes you should definitely invest in one, they aren’t very expensive, mine is quite old, I’d love to invest in a newer one which have so many bells and whistles. Regarding the lemongrass paste, it does not call for it, but lemongrass has such a distinct flavor and adds a lot to the dish. But like I said, the recipe did not call for a few of those ingredients, I always look at a recipe and then add my own twist to it. Go ahead and give it a try. I’ve found these really lovely pastes in a tube, there’s cilantro, parsley, lemongrass and others, and it is great as it does not go bad as some of the fresh ones do.
