We’re just a few weeks away from Thanksgiving, a holiday I absolutely love. In fact I probably have more of a fondness and appreciation for this holiday over Christmas since it is not as commercialized. The First Thanksgiving was celebrated by the Pilgrims after their first harvest in the New World. Today Thanksgiving evokes images of football, family reunions, Thanksgiving parades, roasted turkey with stuffing, pumpkin pie and giving thanks. For most Americans it is a 4 day weekend, Thanksgiving being celebrated on the 4th Thursday of November. It is a holiday I look forward to as it involves togetherness, food, warmth and sharing.
I’ve started preparing my menu a few weeks in advance and in the coming days will actually make up a list. I know I will be making this pie as one of the desserts. I made it last weekend and brought it up to our daughters in New York City, it was very well received. A hint of orange peel, mixed with cranberries and almond essence definitely bring out the flavors of this very simple pie. The walnuts add a wonderful crunch, eggs, butter and flour round this out beautifully. Be warned though, this pie is packed with calories, but is anyone watching their waistline around Thanksgiving? I think not 🙂
Preheat oven to 350F. (Convection 325F)
- Mix and place in buttered pie 9-10″ dish:
- 2 cups cranberries
- 1/2 cup sugar
- 1 tsp orange zest
- 1/2 cup chopped walnuts
In a separate bowl, cream
- 2 eggs
- 3/4 cup butter
- 3/4 cup sugar
- 1 teaspoon almond extract
- Add one cup flour after creaming the above
Blend till barely mixed. Spread over top of cranberry mixture. Bake 45 minutes, till bubbly and light brown.

Loretta, I love the holiday too! We have been getting together with 3 other families here for ages now. My contribution to the meal every year is the appetizers, salad and one dessert, usually an apple crisp that has made its way to the table next to the pumpkin and pecan pies. My friend who hosts it is a gourmet cook so the meal is just amazing!This year she has more of her family and friends coming so we will be about 25 of us!The more the merrier, right?

But I still love the holiday so much, even better than Christmas which tends to be too commercialized. Can’t wait to hear what your gourmet friend prepares for the feast. Are there pies not packed with calories? If so, please tell me – or better yet, don’t, because then I might be forced to give up pumpkin/apple/pecan! This one also looks delicious, but then again, I have never met a pie I didn’t like.

Still a little bit unsure Loretta. My husband will be travelling and be back just in time so it’s going to be mostly us 4 unless something changes. But chicken will make the list and turkey will be skipped. Maybe I will try your mum’s stuffed sausage chicken which sounds to be full of flavors. Have a great weekend 🙂

What a beautiful pie! I love cranberries with orange but haven’t ever had them in a pie. I too love Thanksgiving, but I still love Christmas because both my children are home. I am already making lists planning both holidays. How about you Loretta? Are you feeding a few or a bunch?

Ido like Christmas too, but without the commercialism Julie. We will be having both our girls and their Bf’s, but we will also be inviting a few friends who do not have anywhere to go to. We usually do that, sowe may have 11 around the table. Iwanted to ask if you had any plain rolls that Icould bake that won’t be too complicated?

Julie it is hard when you aren’t able to share T’giving with your family. We have no family here in the USA, we used to always be invited by different friends, but it’s been a few years now where I’ve hosted it here at home and invited others who have no family around. It’s a win-win all the time. How many do you have at your table each Thanksgiving? Thanks so much for the dinner roll suggestion. I only have 8 this year for John’s side of the family, and I will make desserts and go to my sisters the Sunday after. It’s quite a bit bigger and I love being with them. It would be hard not having family here. Will your girls be home?

I’ve seen them pretty often, or at least I can buy frozen. I’m living in Dubai. Here , cranberries are usually sold from US. But in Russia, cranberries are smaller (and they are local) and you can also buy them frozen all year round!

I love cranberries Loretta but never had them in a pie. I have a favorite cranberry salad I always make over the holidays but a pie would be very appreciated by some members in my family. Thanks a bunch for sharing with us one of your special holiday desserts – Happy FF 🙂

I love pies when the custard puffs up over the fruit filling. This sounds wonderful and would be a perfect addition to Thanksgiving. I’m preparing my menu too… it’s my least favorite part of Thanksgiving. 😉

Wow, how exciting Freda – first Thanksgiving? I do especially love this holiday here, some of the other holidays I’m not too crazy about, even Christmas is just so commercialized now. I’m sure you’ll come up with a delicious menu though, maybe add Goa sausages to your stuffing 🙂
