A simple but scrumptious Toffee recipe

Allowing oneself life’s simple pleasures every so often is high on my agenda.  Sometimes I go through phases when I allow myself such indulgences.  My no-guilt period goes flying out the window, I crave carbs and sweet delights.  I try my darnedest to adhere to rules I set for myself, but they don’t always work and I fall off the wagon.  Do you ever find yourself in such a dilemma?  I know I do.  This was a case in point.  I had taken these moreish toffee squares for a dessert on 2 different occasions and naturally I made a batch to keep 🙂  They were quite a hit.  The recipe is very simple and pretty versatile.  You can add whatever strikes your fancy.

picmonkey-collageBasically pecans are typically used in this recipe.  However, I had almonds on hand and added some cashews for good measure.  I lightly toasted a cup of the chopped almonds and cashews first.  Butter a square 9″ x 9″ pan.  Spread the nuts in the pan.  In the meantime, heat 3/4 cup packed brown sugar and 1/2 cup (1 stick) butter in a pan.  Heat sugar and butter to boiling, stirring constantly for at least 7 minutes.  It is important to stir this mixture for the said amount of time.  Immediately spread the mixture over the nuts in the pan.  Sprinkle 3/4 cup semi-sweet chocolate pieces over the hot mixture and place baking sheet over the pan so the heat will melt the chocolate.  Carefully smooth out the melted chocolate over candy.  When still hot, I lightly scored the squares before I chilled till firm.  When firm, cut into 1 1/2 inch squares.  Strawberries and toffee anyone?

  1. Yum, this looks delicious Loretta! And yes, I know exactly what you mean about letting the sweets/carbs get the best of you sometimes. But hey, life is short and you only live once. Why not indulge? 😉

    1. Thanks Freda, guilty pleasures should be allowed every so often don’t you think? I’ve never tried making the Goan toffee they serve around Christmas time. Have you? As for all those Goan sweets……….oh my!

      1. If I could have it my way, I’d be eating sweets all day long! Gotta draw the line somewhere though..hehe.. 😀
        Yes I’ve made the Goan milk toffee, had posted it during Christmas last year. It’s the shorter version though, that my mom learnt from her friend. It uses condensed milk , so the hours and hours of stirring milk is eliminated 🙂

  2. Oh heavens Loretta, toffee is probably one of my very favorite treats. I agree that you just have to give in once in a while. I love putting treats out like this for guests too so they can serve themselves the exact amount that they want. This toffee will make a great treat at Christmas too.
