Remember my last post when I made those yummy chocolate mousse cups with the liquid from a can of chickpeas? Well, I saved the chickpeas and made these vegan, gluten-free and healthy chickpea blondies. You might think I’m switching to a vegan or gluten-free diet? No I’m not, I’m just trying to make some healthy desserts to satisfy my sweet tooth without the loaded calories. I think I can safely say, I succeeded. They are fudgy, chocolatey and oh so moist.
So it must seem a bit hypocritical that I post pictures of this luscious dessert after preaching about heart healthy foods last week don’t you think? Yes, for the most part we still concentrate on keeping our tickers in check, but every so often these indulgences take over and there’s no stopping me. In my defense though I’ll have to say that some of these calorie laden desserts mostly surface in my kitchen when I am entertaining or in this case, we were invited to dinner, and I offered to bring dessert.
Need a quick side dish that is healthy and moist? Look no further, this tri-colored quinoa can be served up with a main course or just as a side. Best of all, it is vegetarian and gluten-free. You’ll find the bold, beautiful colors of this dish both satisfying to your senses as well as your waistline. I don’t have a recipe per se, but I will attempt to itemize the ingredients used and the assembly of the grain bowl. All I can say is that it packed a mean flavor punch for sure.
