No, it’s not St. Patrick’s Day, and by golly it’s not even Fall or Winter, but my taste buds were crying out for some comfort food. I do love the simplicity of summer cooking, you know fresh veggies, using the outdoor grill etc. However, there’s nothing quite like a bowl of comfort and this Irish Pork Stew ticked all the boxes for my husband.. I’ve mentioned before that I’m happy with a fish and vegetarian diet these days, but I like to cook a good hearty man’s stew for hubby every so often. This definitely ticked all the boxes for him 🙂
When there’s a slight nip in the air, my taste buds crave comfort foods. Whilst many long for an endless summer, I anxiously await the drop in temperatures. You see, summers on the East Coast of the USA are hot and humid; I’m not a fan of air conditioning, but in this part of the world, one cannot live without it. I welcome Fall with open arms, there’s just so much to look forward to. This Thai Basil Chicken curry was the first dish I cooked when the weather turned. I wanted to use some of the Thai sweet basil that I had in the garden, I also wanted to test the Thai chilies – be warned folks, they are pretty hot, so handle with care. It is National Curry Week in the UK, so what better way to showcase this week satiating your taste buds with a glorious aromatic curry.
Thinking of Selma again as I prepare to cross the pond in a couple of months to visit family and friends. You see about this time last year, Selma and I had arranged to meet up in Winchester, explore the area and get better acquainted as blogger friends. But it was not to be, in the end I was not able to keep our assigned date, but had promised that we would try again this year. I am still so saddened by the tragic loss of a wonderful woman who reached out and touched so many hearts and minds. She was well loved by all the blogging community. Looking through her blog again prompted me to try this chicken dish. I love chicken cooked up in many different ways and this one has to be my all time favorite. I’ve cooked it a few times and it always receives rave reviews at our house.
